Tarragon creamy chicken

RECIPE

INGREDIENTS
Chicken breast, 2
Onion, 1
Cherry tomatoes, 10
Halkidiki olives, 10
Spinach, 2 big handful
Full fat cream, 3-4 dl
Chicken stock, 1 cube
Soy, a splash
Lemon, a splash
Spices: Tarragon, chili flakes, salt & pepper
Butter for frying

HOW TO
1. Prepare the chicken and chop it into bite size cubes
2. Chop the onion, tomatoes and olives as you prefer
3. Fry the chicken in butter until it’s cooked – add onion to the pan
4. Add cream, chicken stock, soy and spices – let boil for 5 minutes
5. Add olives, tomatoes and spinach – let simmer for 2 minutes
6. Add a splash of lemon – adjust seasoning if needed
7. Ready to serve!

SERVE WITH
Whole wheat rice, carrot sticks & lit candles 🥰
