Italian fish stew
RECIPE
INGREDIENTS
Cod filées, 3
Chickpeas, 1 package
Onion, 1
Garlic, 1 clove
Olives, 10
Cherry tomatoes, 10
Canned tomatoes, 1 package
Soy sauce, 1 tbs
Lemon juice, a dash
Spices of your choice (I used oregano, chili flakes)
Salt & pepper
Bay leaves, 2
Butter
HOW TO
1. Chop onion, garlic, olives, cherry tomatoes
2. Cut the fish into bite sized cubes
3. Fry onion and garlic in butter until soft – add canned tomatoes
4. Add all seasoning and let simmer for 5-10 minutes
5. Add chickpeas, olives, cherry tomatoes and the cod – let simmer until the fish is throughly cooked (about 5)
SERVE WITH
Wholewheat rice or oven roasted potatoes
